PigWizard Dinner w/ Firestone Walker Brewing and Point Reyes Farmstead Cheese

Every course will not only be paired with a Firestone Walker beer, but will also use the beer and elements of beer making in the food. Ham brined in beer, pork belly cooked in beer, beer caramel, barley risotto....
Wait, BEER CARAMEL?!
Yeah, beer caramel. And beer ice cream. Yeah.
We will also be featuring Point Reyes Farmstead Cheeses. Of course the Original Blue is widely known, but did you know they make mozzarella? And the Toma Reserve, man, that's some good stuff.
So here's the menu.
5-6:15pm Reception and passed appetizers, Firestone Walker Pale 31 on tap.
Croque Monsuier - Pale 31 brined rosemary ham, Toma cheese, Big Sur Bakery bread
Rillette - lard & Firestone Pils braised shoulder, grapefruit marmelade, Toma Reserve, puffed barely crisp
Fried Bolonga - mortadella made w/ Double DBA, barrel and barley smoked, Point Reyes mozzarella, DBA fermented lemon cucumber

Pork & Clam - Cajun Andouille, clams, kale, Union Jack dashi, kale crisp,
Served with Firestone Walker Wookey Jack Black Rye IPA
Beer Belly - DBA braised pork belly, Point Reyes Bay Blue, sweet potato barely risotto, fig membrillo
Served with Firestone Walker DBA
Velvet Caramel - Velvet Merlin candy cap mushroom ice cream, Acme Coffee decaf cold brew orange syrup, malted meringue crumble, Beer Bacon Caramel PorkCorn
Served with 2013 Velvet Merkin Imperial Oatmeal Stout
During the reception, and after dinner, you'll also have the opportunity to buy some of the exclusively made PigWizard products going into the dinner.
If you haven't bought a ticket already, it's either because you're a vegetarian and you're not really welcome anyway (not to be insensitive, but why torture me? I don't ask for bacon at vegan restaurants), or because they are all gone. In the second circumstance, fear not, more PigWizard Dinners are in the works, and any extra PigWizard products will be for sale the following week!
