| Description |
Chef Jim Switzenberg, HACC Culinary Arts Instructor, has crafted a delicious and creative menu, built around fresh, local and naturally or organically raised produce. Sample a cornucopia of heirloom apples, including Thomas Jefferson's favorite.
Producer reception: heirloom apple sampler, barbequed pork slider, Waldorf salad, Amish-style apple & pork sausage, sparkling cider and farmstead cheese.
Appetizer: harvest soup (squash & apple) and selection of artisan breads.
Main plat: fennel & caramelized cipollini stuffed pork loin and apple risotto in cider glaze.
Dessert: Spitzenberg apple tarte Tatin and maple(raw milk) ice cream.
