Basic Kitchen Skills- Katherine's Culinary Experiences
Brush up on the basics with Chef Todd - from basic cooking techniques and menu planning to timing tips, meat cuts and more. Hone your garnishing skills- well show you our trade secrets with fresh vegetables, garden herbs and exotic fruits. Improve your basic carving skills by learning how to carve a whole chicken and platter it - complete with a beautiful garnish.
We'll also show you how to 'break down' a whole chicken! Chef Todd will teach you how to chop an onion and finely dice colorful peppersyou will be amazed how easy it is! Learn to cook without measuring by using your palate. We will make a vegetable soup and create a delicious pasta dish from what you have in the pantry.
Learn how to store fresh herbs and make great pesto sauce with bunches of basil and herbed olive oil with croustades to go with them. This is a great class for entry level cooks as well as those who are just looking for an "upper cut".

Chef Todd Stapnowski has been leading the Katherine's kitchen production team since 2001. Chef Todd graduated from the Oakland Community College Culinary Arts Program, and has been honored with several awards. They include a bronze medal from the American Culinary Federation for his outstanding hors doeuvre presentation. He won a Gold Medal in the Sysco chef 'cook off', and he was also honored by the American Culinary Federation at the Plymouth Ice Carving Show with both Silver and Gold Medals.
Prior to his teaming with Katherines, Chef Todd brought his amazing talent to Main Street Ventures, The Detroit Athletic Club, Washtenaw Country Club and the Gandy Dancer. He is thrilled to be teaching these Culinary Experiences, and continues to educate himself and his amazing team of culinary professionals.
Classes begin in January 2008 and will be held Wednesday and Thursday evenings from 6-8PM.
