The incomparable Louella Hill is back with a rare, not to be missed, series of BIG WHEEL classes. We're making wheels of blue and cheddar -- you heard right? We are making our own cheddar cheese (see picture)!

The idea of being a cheesemaker popped into my head while on a sheep farm in Italy. There I tasted one incredible cheese after another and was blown away. It dawned on me I could be part of crafting these flavors. I could be a part of cheese all the way from grass to dinner plate. Since then, I've trained with a sheep farm in Tuscany (Pecorino Toscano, Ravigollo, Ricotta), a cow farm in Emilia-Romagna (Taleggio, Tomini, Scamorza), a cow farm in the Hudson Valley, NY (Farmstead Cheddars, Yogurt), a goat farm in mid-coast Maine (Chevre, Feta, Bloomy Rinds), and a family-owned creamery in Rhode Island (Mozzarella, Gouda, Asiago).
I love teaching the magic of cheesemaking. I love empowering people with tools to be more self sufficient. Plus cheese tastes so good!
