Local Foods Cooking Classes at Boone Street Market
Three different cooking classes in the kitchen at Boone Street Market taught by Melissa Rebholz. Melissa is an organic farmer in Greeneville, TN. She studied Culinary Arts at the Natural Gourmet Institute in NYC. As a farmer, she is interested in promoting local and seasonal eating and as a chef she wishes to teach people how to eat seasonally year-round in our region.
"Healthy" Holiday Baking November 17, 6:00 pm - 8:30 pm
In this class we will talk about baking without refined sugars as well as adding local, seasonal ingredients into your baking year-round. We will talk about gluten-free and vegan baking options.
Recipes baked and tasted during class will include:
Genoise Cake with Almond Ganache Spiced Carrot Cake Apple Scones (gluten-free) Pumpkin Tart with Cornmeal Crust (gluten-free)
Vegan Soups and Stews December 15, 6:00 pm - 8:30 pm
Learn to build flavors using vegetables and traditional Japanese stock, Dashi.
Recipes inclue:
Miso soup with local greens Winter Vegetable Borscht Root Vegetable Stew with Lentils
Homemade Gnocchi with Seasonal Pestos January 11, 2016 6:00 pm
Recipes include:
Potato Gnocchi with Kale Pesto Sweet Potato Gnocchi with Sage and Butter Pumpkin Gnocchi with Roasted Garlic and Sundried Tomato
