Nathan Myhrvold, former Chief technology Officer at Microsoft, co-founder of Intellectual Ventures, and co-author of the revolutionary six-volume, 2,400-page Modernist Cuisine reveals science-inspired techniques for preparing food and shares how the authors and their team achieved astounding new flavors and textures by using tools such as water baths, homogenizers, and centrifuges, and ingredients such as hydrocolloids, emulsifiers, and enzymes.
