Cheese Milk: Production, Storage, & Transportation
The production, storage, and transportation of raw milk determine the quality of that milk as a raw material for cheesemaking. Learn how farm management choices (i.e. feed, housing, and milking systems) result in milk specifically suited the production of particular styles of cheese. We will investigate how storage time, temperature parameters, and transportation methods affect the quality of milk for cheesemaking. Finally we will consider what choices must be made to make or procure the right milk for the cheeses you want make.
