Sauerkraut is featured in many of our dishes here at Cafe Umami and we are constantly churning out new batches to keep up with the demand. We want to share the steps for making this delicious lacto-fermented wonder with you in this fun workshop.
The class will begin with a lecture that will delve into the history of sauerkraut, nutrition information, different styles and an overview of ingredients to consider incorporating. We will talk about troubleshooting and give you not only an easy to follow recipe but also discuss a general template to follow. We will provide a whole host of different herbs, spices and other innovative additions so that you can fully customize your jar. This will better help you to improvise when you want to recreate the sauerkraut magic in your own kitchen.

About the instructor:
Marie Brennan graduated from the University of Wisconsin with a degree in Dietetics. An avid traveler, she has explored her love of food while on the road. Marie's travels have taken her to study cheese-making in Tasmania, raw food in Western Australia, tea and fermented foods in the mountains of Korea, Ayurvedic cuisine and herbology in Kerala and the kitchens of numerous meditation centers around the world. She moved back to the USA to attend a holistic culinary arts school in Berkeley, where she also worked and taught at for several years. Marie presently lives in the Bay Area and works as an educator, private chef and is the Culinary Creative Director for Café Umami.
