Hands-On Oyster & Wine Tasting What shapes the flavor of an oyster? We are bringing in two of the most influential and innovative people in the oyster biz, Bill Mook & Jeff Auger of Wiley Point Oysters, to talk through the life cycle of an oyster and how nature, grow-out method and season shape the flavor profile of the oyster that lands on your plate. Most importantly, they will show you how to properly and safely shuck them! Plus, we wouldnt dare let you go thirsty. We will shuck and taste 8 different oyster varieties while David Burke of Verity wines walks you through how to pair with these oysters based on their different flavor profiles.
