Cheesemaking with Gianaclis Caldwell
On Friday, October 25th, 2013, from 9:30 to 3:30 p.m. at College of Marin in Novato in ROOM 152, join fellow cheesemakers to get down and dirty with acids and buffering.
As a working farmstead cheesemaker--who also writes--Gianaclis Caldwell has the opportunity to continually perfect her understanding of the art and science of cheesemaking. In classes at her creamery, Pholia Farm, and in venues across the country, Caldwell shares her understanding of complicated processes in an easy to understand fashion.
Her first book, The Farmstead Creamery Advisor, continues to be a resource for those considering a career as a small cheese producer and her second book, Mastering Artisan Cheesemaking, serves as an in-depth reference book as well as a full course for those seeking to become master cheesemakers. The book has won multiple awards and earned 5-star status (after over 50 ratings) on its Amazon profile.

The material to be covered will be appropriate for beginning to advanced cheesemakers and will look specifically at the role of buffering and controlling acid as a way to direct cheese texture.
