Jonny Hunter, chef and owner of the Underground Food Collaborative in Madison, Wisconsin, will talk about innovation in food and how a small company can rethink its supply chain in order to compete with large, multinational corporations. In order to survive in a food industry that has pushed out small producers for the past 60 years, Hunter and his team focused on waste, innovation, health, and taste and discovered that this focus was one path toward a better food system that aligns with the values consumers are demanding.
