Introduction to Entremets : Crèmes and Charlottes
Open the door to the world of French entremets. While historically this course was not always a dessert, in contemporary French pastry it represents the world of crèmes in desserts, the ones you find layered between stacks of meringue and biscuit with literally hundreds of possibilities for variation, and the realm where many French pâtissiers create their signature desserts. In this class we will demystify some simple but elusive classics, crème caramel and crème brûlée, and learn how to pipe our own biscuits à la cuillère for individual charlottes filled with fresh fruit bavarois. This class is a game changer. It will inspire you to experiment and have fun with desserts in ways that will continue to delight and surprise.
