Chicken Mole Making Class at El Centro de la Raza
El Centro de la Raza (The Center for People of All Races) offers tamale making classes and is expanding class offerings! Learn how to cook our favorite dishes, share in our culture, and meet new people all at the same time! Class fees benefit our Senior Nutrition & Wellness Program.

Below is a list of our current classes, but check back often as we will keep updating this list throughout the year.

Mole Classes:
The mole comes from the southern region of Mexico where there is heavy Amerindian influence and chocolate is used in both sweet and savory dishes. Mole typically contains a mixture of chiles, nuts, seeds, and vegetables. They sometimes include unsweetened chocolate and tomatoes, raisins. Avocado leaves, epazote, and various spices might be used. Many, including the most famous Mole Poblano or Poblano de guajolote, from Puebla, said to be the first, contain chocolate. Moles are typically served on festive occasions, such as fandangos and birthdays. During the days of the dead in November, mole is the food offering made to the ancestors. Each region has their own variation, some of which are simple and some of which are highly complex with up to 100 ingredients. Families, of course, pass down their own recipes, so there are probably as many moles as their are Mexican cooks. The sauces are served with poultry, meat, vegetables, seafood..you name it.
