'Among the foremost explorers of the California Central Valley was Gabriel Moraga. In 1806 he made the first transit of the San Joaquin Valley; while in 1808 he made the initial reconnaissance of the northern half of the Great Valley, bestowing the name that it still bears- The Sacramento.'
What I love about cuisine in California, unlike other world cuisines, is the melting pot of cultural influences. I've always wondered what a true Sacramento Valley cuisine could be described as. For me the intersection of the Native's knowledge of indigenous ingredients and the earliest European influence seemed like the most important period; a time in which the full potential of our region was utilized. Join me as I present a tasting menu using only ingredients indigenous to the area, applying an early Spanish influence and modern techniques. Dinner starts promptly at 7:00PM and will be hosted at a pop-up location, revealed to diners the day before the dinner.
