Release Party for Black Project #1 - "Flyby"
Come celebrate the release of the first Black Project beer.
A black project is the name given to the historic and current areas of miltary/government spending with classified goals - (SR-71 Blackbird, B2 Bomber, F-117 "stealth fighter" being examples of now-public "black projects").
To keep with this idea, we will be announcing the parent brewery and location of the event within 5 days prior to the event. The brewery is located in Denver and the taproom will be closed for the release party on Monday, August 25th.
This is (as far as we know) the first coolship / 100% spontaneous ale to be released from a Colorado craft brewery.
It has a golden red color, mild acidity, and wonderful complexity and depth of flavor. At least 3 distinct strains of Brettanomyces, and several strains of aerobic yeast were present and active during fermentation (based on our testing during the initial days of production).
The beer is drinkable and approachable, and yet contains subtle pleasant flavors and aromas that are not usually found in wild/sour beers produced from lab cultures.
Black project is top-secret side venture of a local Denver brewery that will create beer using only spontaneous fermentation. Initial releases will fund future releases directly, including a larger coolship, more barrels, and more production days.
What you will receive:
1. A pour of Black Project's first release, codename "Flyby". (Tapping at 7:00PM)
2. One of any of our parent brewery's beers. (Doors open at 6:00PM and the tasting room will be open until 9)
3. A very limited edition Black Project shirt, hand screen printed by our brewers just for this event.
4. Two tickets for a raffle of the only 6 bottles to be released of Black Project #1. Future releases will be larger and larger batches and have a larger emphasis on bottle releases.
5. Discounts on the brewery's regular pours for the entire duration of the party.

What is spontaneous fermentation? The name implies the fact that no cultured microbes are added to the wort in order to ferment the beer.
How does the beer ferment, then? Traditionally, the wort is exposed overnight to the air to cool, in a vessel known as a coolship. This shallow, metal "pan" allows wild yeast and other microbes from the environment to inoculate the wort. Fermentation begins shortly after. The result is a complex, wild, typically sour ale. This is the method used to create many traditional sour beers, especially Belgian Lambic.
Black Project beers are all brewed for this process and no lab/cultured microbes will ever be added to a Black Project beer. In fact, we do everything in our power to make sure that our wild ales are fermented 100% with truly wild organisms from our local environment, without any intentional or accidental additions from human hands.
