A Toast of Spring: Food and Wine Pairing
A Toast of Spring: Food and Wine Pairing with Bold Catering and Vino Verite
Join us for our first food and wine pairing event at held in the intimate space at Vino Verite. Aaron Strauss, co-founder of Bold Catering, will prepare five small toast-style appetizers, served to each guest. This will be a fun and informal event emphasizing the current flavors of Spring and locally available, farm-to-table ingredients, paired with a specially chosen glass of wine representing the great wine regions of the world.
Guests will be greeted with a glass of sparkling wine. This is a bonus wine, served just for the fun of it.
Each plate will then be accompanied by a tasting pour paired specifically for that serving:
First Toasts: Housemade Gravlax, Rye Toast, Chive Crème Fraiche, Pickled Sunchokes And Clam Escabeche, Baguette, Garlic Aioli, Greens
Interlude: Sauteed Wild Mushrooms, Sourdough, Jasper Hill Farm's Moses Sleeper
Final Toasts: Braised Duck Leg, Arugula, Cara Cara Orange Marmalade And Roasted Local Pork Loin, Savory Fig Jam

About Aaron Strauss, Co-Founder of Bold Catering: With almost 10 years of professional cooking experience, Seattle native Aaron brings his full cooking and business knowledge to Bold Catering.
Following high school Aaron attended and graduated from the Seattle Culinary Academy. During his studies, SCA began to shift their focus to local, sustainable cooking. Through culinary school Aaron had the opportunity to attend the Quillisascut Farm School where, with help from Rick and Lora Lea Misterly and Chef Karen Jurgenson, his appreciation for seasonal, local food really began.
During culinary school and his undergraduate studies at the University of Washington, Aaron worked at multiple Seattle restaurants and catering companies, including Etta's Seafood, Café Campagne, Madison Park Café and Lisa DuPar Catering. He was part of the opening team at Barrio Mexican Restaurant. After briefly flirting with law school, he took a job at Seth Caswell's Emmer and Rye. As the lead line cook at Emmer and Rye, Zach and Aaron developed a friendship and work relationship that inspired them to open Bold Catering. Most recently Aaron assisted in the kitchen at Dustin Ronspies' Art of the Table. Working for Dustin and Seth only increased Aaron's commitment to local agriculture and seasonal cooking.
About Dave Egan and Tom "Haj" Hajduk, Co-Founders of Vino Verite: Dave and Tom both came to love wine through the consumer's perspective. Early on, they both recognized an issue with perceived "snobbishness" when it comes to learning, knowing about, or choosing wine. Wine, they think, should be accessible to anyone, and need not be complicated if choosing an expensive or value wine. The goal is to explore as much as possible to determine one's favorite tastes as well as new wines and regions. With over 30 years of experience in retail, wine, and food pairing, they bring unique passion and enthusiasm for wine and people. As one customer put it, "Dave and Haj are not only stand up guys, but a wealth of friendly knowledge when it comes to wine. Their passion is apparent in their demeanor and their carefully selected collection." Vino Verite has over 1200 different wines in the small space, allowing customers to easily browse on their own or to choose something specific to serve any need.
