TRADITIONAL SALUMI BUTCHERY & NOSE TO TAIL UTILIZATION
An intimate hands-on look into the history and science of curing, traditional salumi butchery & nose to tail utilization of the hog.
Class begins at 6 pm, accompanied by wine and snacks.
**Charcuterie Class Tickets- $35 **VIP Tickets- $75
VIP package includes Charcuterie Class + private lesson with chef Manny Augello in curing your own cut of salumi, which we will tenderly cared after till it has reached its maximum piggyness. (To take place immediately following end of class.)
