Have you ever tried Jamon de Bellota?
The flavor is unforgettable, packed with Omega-3s and it melts in your mouth! The traditional methods of production of this most spectacular of hams, along with the rigorous standards of the Denomination of Origin imposed on those who choose to farm the Iberico pigs are so strict that the resulting ham deserves its place alongside caviar, truffles and champagne in the upper echelons of cuisine.
Jamon Iberico de Bellota is prized for its unique taste, created in part by the aroma of sweet acorns that the pigs feed on ("bellota" means "acorn"). Iberico pigs must graze under Encina oak trees, because their acorns give the pigs fat a rich, creamy texture that melts in your mouth. The salt curing of the meat and the three years of aging that follows makes for a taste that lingers like a fine wine. It's a true Spanish national treasure we get to serve to you on the daily.
This dinner will be one to remember! The grandson of Fermín Iberico will be joining us to share memories of the Fermin legacy and slice ham for tasting. Chef Jose Chesa and Sous Chef Abel Mendoza from CHESA will showcase Fermín Ibérico products with dishes inspired from different corners of the world!
7 courses with beverage pairings and gratuity included for $200.
MENU:
Course 1 - China Lomo Iberico Char Siu: roasted Iberico lomo, stir-fried escalivada, ramps, mung bean sprouts
Course 2 - Mexico Quesadilla de Chorizo Iberico: Iberico chorizo quesadilla, piquillo de gallo, flor de calabaza, goat cheese, avocado
Course 3 - Italy Fermin Pork Cheek Risotto: 16-hour braised Iberico pork cheek, bomba rice, manchego cheese, arbequina olive oil
Course 4 - Japan Pluma Iberica Yakitori: Josper-charred flank steak yakitori, soba noodles, miso-jamon daish, sous vide jadori egg
Course 5 - Morocco Mechoui Iberico Ribs: roasted charmoula-cumin Iberico ribs, couscous, yogurt
Course 6 - Spain Cochinillo Iberico: Iberico milk-fed suckling pig, seasonal vegetables
Course 7 - United States Iberico Apple Pie: Jamon de bellota apple galette, yogurt ice cream

FAQ:
Can I get a refund once purchased? Can I exchange my ticket for a different night?
No. Just like a sporting event, concert, or theater ticket all sales are final.
What should I do if I am running late?
If you are running late, please call us at (503) 477-9521. If there is a delay of more than 15 minutes of the scheduled reservation time we reserve the right to amend your menu to fit into the time frame. Please also note that if you do not arrive within 15 minutes of your ticket time we may be unable to seat your party together, due to the restraints of the restaurant size.
Do you offer a vegetarian or gluten free option?
Unfortunately, not at this time. Due to the nature of the menu, it is not possible for us to accommodate those with certain dietary restrictions. Please email any questions to hola@chesapdx.com
What about allergies or other restrictions?
Chef Jose strives to accommodate all guests, but we are unfortunately unable to accommodate special requests, aversions and/or allergies for this special dinner. If you have any questions, please e-mail us at hola@chesapdx.com
Do you take walk-ins?
No. This event is ticket-entry only.
I have a party of 6, can I add additional guests to my party without purchasing tickets?
Guests can purchase up to 6 tickets at a time via Brown Paper Tickets. Due to the nature of communal seating, we can only provide seating for the number of tickets purchased. Any additional guests must purchase their own tickets at least 48 hours in advance of the event.
