Farmer to Table at Cook St Paul
This dinner series will highlight one local farmer/farms products in every course of a prix fix meal.  We will also have one table (that seats up to 7 people) reserved for the farmers to bring whomever they choose to dine with us, on the house.  We want to show our appreciation for the people that churn the butter, sew the seeds, butcher the livestock, gather the eggs, and put all the work into providing the amazing local ingredients we use to make our food what it is.  And, we want the people that appreciate what these farmers do to be able to let them know that in person.

The meal will be created and prepared by Cook St Paul's chef Mitch Robbie.  It will be a five course meal, where every course highlights the versatility and high quality of The Hope Creamery's butter.  

Here is a little information about the great people we are featuring at this dinner:

The Hope Creamery had been a farmer cooperative since the new building was built in the 1920s.  Since 2001, the creamery has been owned and operated by Victor Mrotz, a local farmer and entrepreneur that saw an opportunity when the creamery was slated for closure.  He bought the building and the land and used the original label to produce a butter that is a thing of the past; Hope Creamery Butter.

As the years have gone by, local has become an important part of consumers food choices.  People like to know where their food is coming from and how is it produced.  Hope Creamery fits that profile very well.  Our butter is made using an age old process.  Vat pasteurization, small batch quantities and made fresh every week.  While some large producers of butter will manufacture and then freeze their product until it hits the shelf in the grocery store, we never inventory product.  Our business model is simple; we make butter, we sell butter and then we make more butter.  Simple.

We dont milk cows so we buy cream from two sources; Plainview Creamery and the Hastings Creamery.  Both use locally sourced farmers who strive for a quality product.  Though we are not organic, we are growth hormone free.  Fresh and delicious, you will be surprised at how much difference you will taste.  The Hope Creamery makes butter the old fashioned way and you can tell the difference.
