Hill & Hollow is honored to announce the 4th Dinner in our Appalachian Global Dinner Series, Aged Beers paired with Rare Delicacies. This 6-Course dinner of some of the Worlds hardest to obtain ingredients, paired with small batch aged beers. This dinner will be limited to 20 participants.
Two of these beers, the Sierra Nevada and the Samuel Smiths, were aged for three years and two years respectively, in the wine room at Richwood Grill, then moved to our cold smokehouse at Mountain Ridge Farm to continue aging since 2013. The Yorkshire Stingo is brewed entirely by hand from grains from a single farm once each year. The Sierra Nevada was an extremely desirable small-batch celebration brew, and we were lucky enough to obtain one of only two cases shipped to West Virginia. The Bridge Brew Works are from their archive cave and we are humbled to be serving the very first bottling of each of these flagship brews. The youngster of the group, Chestnut Brew Works 16-month aged sour, is a wild fermented ale aged in oak barrels, and this pairing is its only off-premise appearance.
Stepping outside our usual dedication to local ingredients, we felt these beers, particularly the West Virginia offerings, were worthy of some of the worlds finest and most sought after ingredients. We arent sure yet which of the Iberico or Ossabaw pork will arrive first, but were hoping for the Ossabaw. Both have been on order for weeks, but are mighty hard to actually obtain. We wont be opening any of the beers until the evening of the dinner, and we will decide at the time which beer will be paired with which course, so there will be an element of surprise with each course. The Chestnut Brew Works Wild and Sourful Ale will almost certainly be paired with the oysters; all the others will be up to our palates and fate.
