Riff on Risotto
Risotto is that most classic of Italian dishes a creamy rice base that lends itself to endless variation. It takes a little hands-on preparation (but let's be honest - mostly stirring!) and it often seems challenging. In this class we overcome everyone's hesitations and practice the classic technique. Then with a nod to traditionalists, we experiment with non-traditional preparations and ingredients (oats really?). Warm, wonderful, perfect for cold winter nights making risotto is a technique you want to master! $60/person
