As the variety of citrus fruit widens in our markets, we are reminded of the sunny Mediterranean with warm nights, gentle breezes, and zesty dishes which feature citrus fruit so prominently: a great example are Moroccan stews that North African expression of comfort food. In this warm and lively hands-on class, learn the techniques for preserving the sunny flavors of citrus fruit for use all year round. Go home with your own jars of blood Orange/Meyer Lemon Marmalade and preserved lemons, but not before stirring up and sampling a wonderful Moroccan Chicken stew which so beautifully demonstrates the subtlety of cooking with preserved lemons. $60/person Menu - Blood Orange and Meyer Lemon Marmalade - Preserved Lemons - Moroccan Chicken with Preserved Lemon and Olives Reservations are required for this class.
