Hill & Hollow would like to announce The 7th Occasionally Annual & Absolutely Last Ever Appalachian Deconstruction & Molecular Gastronomy Dinner. This dinner is being held one night only and with one seating. It will be a multi-course feast using traditional Appalachian food reconstructed through modern molecular gastronomic theory. Gastronomic theory is, in its simplest definition, the art and science of good eating. It is a modern style of cooking that uses the innovations of scientific disciplines. Perhaps the most famous for this culinary style is Chef Ferran Adria, of the infamous El Bulli in Spain. The meal will be twelve to fifteen courses, served in three acts. Last year's menu is listed below as an example of what to expect. At the end of the meal, a souvenir menu will be presented to the diner, explaining what they have just eaten. In keeping with our standard of using only natural ingredients, all preparations will be done without the use of chemicals or machinery. Molecular Gastronomy and Deconstruction Theory were introduced to the Morgantown culinary scene several years ago by our previous incarnations, Solera Café & Richwood Grill, and we are excited to be working in this cutting-edge genre again.

-Trout liver foie, black cherry air, sweet corn chow-chow
-Arctic char chirque, chicory chimichuri
-Chevre cheesecake, preserved root vegetables, spinach whipped cream
-Lamb tataki maki, pressed herb nori, sweet potato, orzotto
-Smoked tomato ice cream, white turnip drizzle, garlic crouton sprinkles
-Red cabbage gazpacho, venison puree, black walnut oil
-Duck chicharones, pickled tomatillo, raspberry cayenne gastrique
-Pork and pear cookie with apple mole chips
-Pea puree parfait with white asparagus meringue
-Carbonated grapes and house made prosciutto
-Red onion gelee, opal basil, smoked smallmouth bass powder
-Sous-vide beef tenderloin, morel oil, candied baby onion, tarragon air
-Pork poached pear in celery sorbet
-Corned duck breast, rye whiskey foam, buckwheat toast, red shiso
-Ramps three-ways: ramp custard, ramp rayyko, ramp gari foto
-Rabbit confit, fennel polenta crisp, cattail shoot kimchee
-Beef marrow bones, peach moonshine jalea
-Sheeps milk cheese rhubarb, maple syrup, black pepper
-Buckwheat wafer moonpie, apple butter soufflé filling
-Ginseng gingerbread cookie, pulled molasses taffy, honeycomb
-Goats milk blue ice cream, dried plum drizzle, blackberry cajeta
