Join us for an evening of delicious homemade ramen, dumplings, and more at the second Sūpu Sugoi Japanese Ramen pop-up dinner.
Tonight's dinner features an optional 4-course beverage pairing program for a $15 supplement. Program will consist of beer, sake cocktail, wines, and tea specifically tailored to pair with each course.
Michigan shares a latitude and therefore a climate with the lovely island of Hokkaido off the north coast of Japan. Ramen is a cuisine informed by its regions, and tonight's bowl is no different. You'll enjoy fresh and pickled vegetables along with the bold flavors of heritage pork two ways: house-cured grilled chashu belly, and house-smoked pulled shoulder. Of course the star of the night is the noodle itself. 180 degrees different from the instant ramen we've all enjoyed, these fresh ramen noodles have an unparalleled chew and flavor that has us obsessed. We're confident that you will love them too.
The 4-course menu is as follows:
Handmade spicy gyoza pork dumplings w/ sake-shoyu sauce - heritage pork/napa/ginger/garlic/negi - *Paired with a sake cocktail TBD
Yakitori (skewered & grilled chicken) w/ house teriyaki sauce - momo/ikada/crispy kawa - * Paired with a wine TBD
Hokkaido inspired Ramen - chashu/smoked shoulder/menma/fried tamago/kale/miso/negi - * Paired with a beer TBD
Handmade dessert gyoza dumpling w/mochi ice cream - adzuki bean anko/balaton cherry/walnut - *Paired with a wine TBD
For the 6pm service we will begin seating precisely at 5:45pm, no earlier.
For the 8pm service we will seat precisely at 8pm, no earlier.
Sūpu Sugoi is a pop-up restaurant project by Mai Sasaki-Cochran, Dominic Cochran, and Steve Swart that features regional Japanese Ramen styles and homemade gyoza. Pop-ups will be held at various host restaurants throughout Metro Lansing. Each dinner will reflect the unique character of both a particular region of Japan as well as the restaurant that is hosting us. Future dinners will feature vegetarian options as well as wine & cocktail pairings. This is sure to be a unique traveling restaurant experience and we are excited to share it with you!
