Deschutes and Cheese
Deschutes and Cheese is a multi-course pairing of craft beer and artisan cheeses curated and directed by David Phillips of Cheese and Cheers, and Carrie Kortokrax of Deschutes Brewery. We will sit down at The Beer Temple, one of the Midwest's best beer shops, after the store closes, to a half-dozen offerings from Deschutes year-round and reserve series'(including the classic Obsidian Stout and the amazing barrel-aged gem The Stoic), while pairing them with award-winning American artisan cheeses. Deschutes Brewery brewed its first batches in 1988 in Bend, Oregon, among some serious West Coast competitors. It is now the #7 craft brewery in the country by sales volume. Deschutes entered the Chicago market in 2013, so this event will be a great opportunity to survey from the breadth of its beer lineup. The tasting will include specially selected pairings, with generous half-ounce servings of cheese and accouterments (from Marion Street Cheese Market) and 4 to 6-ounce pours of the delicious Deschutes beers. Beer Temple's Nicholas Conti, and Deschutes's Carrie Kortokrax will join the discussion on pairing these fantastic beers with equally exciting cheeses. The list, (with allowances for substitues) is:
Chainbreaker White IPA paired with La Clare Farms fresh chevre, Wisconsin
Mirror Pond Pale with Cabot Clothbound Cheddar, Vermont
Pine Drops IPA with Widmer 4-year American Cheddar, Wisconsin
Obsidian Stout with Pleasant Ridge Reserve, Wisconsin
The Stoic with La Tur, triple crème, mixed milk, Piedmont, Italy
Black Butte XXVII with Bayley Hazen Blue, Vermont
