The Porkening - An Action Tattoo Event
Come Join us and other like-minded lovers of pork for an amazing evening celebrating the deliciousness of the mighty pig! Chefs Paul Staley and Jenn Strange have come together to bring you an evening full of deliciousness, guaranteed to take your taste buds on a rollercoaster ride!
You will be presented with 5 courses, each utilizing different cuts and preparations of pig and wild boar. In a melding of minds, the Chefs have collaborated on 3 of the courses to bring you a fusion of styles and flavors. The other two courses will each will be an individual course from each Chef, sharing with you their own vision for the evening.
Also available will be a variety of signature cocktails, specifically designed by the Chefs to highlight and pair with the different courses, as well as local wines and locally brewed ciders and beers that pair with the various courses.

Bacon and Egg 8 Minute Egg, Lightly Pickled in Soy Sauce, Stuffed with Homemade Sausage and Topped with Torched Shishito Peppers. Served with Asian Sambal and Ginger Home-Cured Bacon Smoked over Cherry Wood
Pig with Broken Bread A Family Style Serving of Homemade Cased Apricot Pork Sausage with Apricot Relish and Accompanied by Honey Bourbon Pork Shoulder and Heritage Pig Rillette. Served with House Made Pickled Vegetables and Artisan bread
Jenn's Southern Smoke Plate Delicious and tender smoked pork cheek and Cherry Bay Glazed Ribs, served with a Crumbled Bacon and Bacon Fat Hushpuppy
Paul's Wild Boar Meatloaf Served with Boar Bacon Sautéed Root Vegetable and Sweet Corn Succotash with apple and Drizzled with a Local Pinot Noir Demiglaze
Dessert Black forest Bacon Maple Crème Brulee served with Burned Sugar and Cinnamon Dusted Chicharrones
