Join award winning baker and master over builder David S. Cargo to learn how to build a portable stacked-brick oven. After the oven is built, it will be fired up while students learn how to make dough for flat breads, pizza, and bread. Bake all these in the brick oven and then eat them.

You will learn the art of building stacked brick ovens, bake in these oven you help build, and leave plans for three different sizes of ovens that you can build yourself.
The class begins with building an oven. You will learn various techniques and how to read the plans for other styles and sizes of ovens. After it's built, it's fired for four hours to get it up to baking temperature (usually 800 degrees or more).
Starting about noon an hour is provided student to eat their lunches and take a farm tour of Abundantly Green. After lunch the class will turn to making dough and students will learn about three types of dough, how to form it into the proper shapes for baking and then students will back pita bread, naan, and pizza. Pizza toppings will be available from Abundantly Green. Participants will be able to eat and share their pizzas and bread.
David S. Cargo is one of the founding members of the Saint Paul Bread Club a former and current baker at Trotter's Cafe and Bakery, a former baker at the St. Agnes Baking Company, and a featured baker in Kim Ode's cookbook, Baking with the Saint Paul Bread Club: Recipes, Tips, and Stories.
Class runs 9am-5pm with a 1-hour break starting a noon for students to have lunch. Students are encouraged to bring a sack lunch. Students should bring gloves, a hat, note-taking materials, and be wearing a sturdy pair of shoes.
