In this hands-on class you will learn the basics of fruit jamming, including what equipment is needed for jamming and canning; an overview of different types of pectin and gelling agents and how they work; how to modify a recipe to add liquor, herbs or spices to your jams; the difference between freezer jams and cooked jams; "shelf-stabelizing" foods and water bath canning. We will be using local produce from Greenstring Farms, The Patch and the Watmaugh Strawberry Stand to make a stone fruit jam; strawberry jam and tomato jam. After our jams are finished and while the jars are sealing, you will be able to sit and enjoy what you've just made with local cheeses, fresh baked bread and a glass of wine! Each student will leave with a sealed jar of each type of jam that we have made and a booklet of recipes from the class!
