"One Night with a Copper River King"
Hello Friends, Family, Foodies, Salmon Lovers, and Pop-up Fans,
Friday, May 29th, at the Pike Place Market Atrium Kitchen....
"One Night with a Copper River King"
A pop-up dinner event celebrating Copper River King Salmon. The mighty Copper River is one of the swiftest and most rugged rivers in Alaska. In mid-May native salmon start returning to the river to begin their long journey to spawn. Because the Copper River is so swift, they must store extra fat and oils in order to survive the long trip. This high fat and oil content is why Copper River salmon is recognized as the best in the world.
We are going to get whole fresh flown Copper River king salmon, and use the entire fish for the menu. The head, bones, and fins will be used to make a stock for a salmon & basil bisque. Skin cracklings and roe will garnish that dish. The thinner tail sections of the filets will be fine diced for tartar with cucumber, dikon, & fresh herbs. We're going to smoke the belly of the filets and serve it with a ginger orange dressed salad, pickled berries, and goat cheese. Then the thick cuts of salmon filet will be grilled medium rare and served with a little red wine butter sauce and shiitaki mushrooms. Creme brule with a touch of coffee will finish our meal.
Champagne, Sauvignon Blanc, Pinot Noir, and Vin Santo wines will be served. Some sparkling fruity beverages for n/a drinkers.
One Night with a Copper River King is a restaurant style pop-up with reservations and advance payment required. Five course dinner with wine pairings, all inclusive, 21 and over, space is limited. Reservations times are: 6:30, 6:45, 7:00pm, and 8:00, 8:15, 8:30pm. Groups are limited to 6 people. We'll have open kitchen counter seating as well as tables in the atrium.
The Pike Place Market Atrium Kitchen is located at 1433 1st Ave. just south of the main entrance next La Vaca Burritos (the best by the way). Lots of parking options around the market or you can also use the valet service at the main entrance.

*For those whom I do not know...formerly cooked at several area restaurants(Salty's,The Hunt Club,Cafe Juanita,Szmania's,etc), owned and operated Candles Catering for 8 years, back out of early retirement for one night only.
