Whole Chicken Butchery
Hands-on poultry processing and humane poultry slaughter class at Chase's Chop Shop in Madera, CA. The class will begin with the humane-slaughter segment involving live birds and proceed to a demonstration of various techniques of cutting and preparing chicken to be cooked, such as the basic eight piece cut, boneless breasts and legs, spatchcocking a whole bird, and trussing a whole bird for roasting (along with an explanation of why you should do this). In addition to the cutting and cooking lessons, there will be a short workshop on stock and bone broth preparation.
This is a significant class for home cooks, professional cooks, and backyard poultry raisers. The modern food system has let us all down in some areas. Large scale raising and processing of chicken offers us a glaring example of these shortcomings. Hardly a week goes by without mention in the press of a serious food-born illness that has its origin in careless processing at one of these large commercial facilities. Added to these unfortunate realities is the simple fact that these commercially raised birds from grocery stores don't really offer much to our taste buds either. They are inexpensive, but their food value and taste are paltry when compared to both the home and pasture-raised birds.
It makes sense that we should learn how to get the most value from our poultry by taking a little extra care in its preparation. In choosing to learn these important skills, we will become better cooks and show a good bit of honor and respect to the birds themselves. A good life for a good life. Participants go home with the two birds they have butchered during the class. Lunch will be provided.
