Sausage 101
Sausage 101 rightly begins a series of butchery and cooking classes at Chase's Chop Shop in Madera, CA. This series starts off with sausage making because a working knowledge of this skill provides the foundation for learning about whole animal butchery. This class and the others to follow are pretty inclusive in that hunters, home cooks, or culinary professionals can all absorb a good amount of skill and information necessary to perform these tasks in a home kitchen or a professional setting.
Class participants will up their game as they learn how to make a few basic sausages. Once you learn about proper proportions of meat, fat, salt, fresh herbs and spices, the small bits of trim that used to confound us are now the little morsels that make up a great sausage. Going from having something that looks like scraps to having a delicious sausage to serve to family, friends, and customers is the essence of sausage making.
Specific skills you will master include grinding the meat, mixing and measuring the salt, spice, and fresh herbs, stuffing casings, and packaging the sausage for the freezer. We won't be making any smoked sausage, but we will talk about the option and the possibility of a separate class on that subject at a later date. Lunch will be served with the class (sausage, of course) and the participants will go home with five pounds of delicious sausage they have made themselves.
About the instructor: Bill McCann's artisanal butchery career spans over 40 years. His rare talent is being increasingly tapped in the Bay Area, where he is often requested to teach at Chez Panisse, Kitchen On Fire, The Local Butcher Shop, and here in the Central Valley, at Chase's Chop Shop. His videos have been viewed by over 1 million enthusiasts on YouTube.
