Oysters 101
Oysters!! West coast, east coast, any coast!  We love them.

These days, we'll skip out of work early for a good oyster happy hour, spend summer evenings knocking back oysters and champagne, throw them on the grill... they're everywhere, and they're from everywhere but here.

That wasn't always the case! Oysters used to cover more than 220,000 acres in the New York Harbor Estuary until early settlers started feasting on these bi-valves with abandon. Long story short, consumption, pollution, and disruption of natural habitats took down the oysters to the point where they nearly ceased to exist in our waters. Until now.

Billion Oyster Project (BOP) is bringing oysters back to the NYC waterways and are going to take us through the ins and outs of how and why they're making it happen. We'll visit their Brooklyn Navy Yard oyster garden to learn about how their programs are repopulating our waterways with our favorite bi-valves.

Participants in this event will experience what it is to be a student during a BOP oyster monitoring event.  You'll hear an explanation of the restoration process and how BOP is growing oysters in the Brooklyn Navy Yard.  You'll get a chance to measure live oysters, test water quality parameters and identify some of the hundreds of other organisms growing on and in the oyster cages.

From the oyster garden we'll head back up to the farm for an oyster tasting, where we'll teach you how to shuck and explore the complex and nuanced flavor profiles of different varieties.

We won't be eating oysters from the East River this time around, but with any luck one day our waterways will be clean enough to eat from once again!

ABOUT BOP
Billion Oyster Project (BOP) is a long-term, large-scale plan to restore one billion live oysters to New York Harbor over the next twenty years and in the process educate thousands of young people in New York City about the ecology and economy of their local marine environment.  BOP is a partnership of schools, businesses, nonprofits, and individuals all working together to grow oysters and make our city a healthier and more resilient place to live.

Oyster Gardening
BOP schools are satellite campuses for oyster restoration. Schools adopt an oyster garden with 300-500 oysters and receive a water quality monitoring kit and BOP curriculum to teach oyster restoration in their classes. BOP teachers lead their students on monthly field trips to tend their oysters and collect scientific data on water quality, oyster growth, and biodiversity. Students become restoration scientists, carry out their own applied research projects.
