Nomad. PDX is an artistic think-tank focused on revolutionizing the experience of fine dining. Based in Portland, OR, Nomad. PDX does away with the old-fashioned, declining market of the typical white tablecloth dining for a breathable yet expressive environment. Without sacrifice to detail on high quality food, drink and wine, Nomad sheds the model of the past through its development of a natural, hands-on approach meant to showcase the beauty of food and its origins. Nomad. PDX invites guests on their food sourcing journey from the earth to the dinner plate through a new atmospheric dining approach.
Executive Chef Ryan Fox channels his comprehensive background to bring Nomad's vision to reality. Culinary Institute of America learned, three star Michelin restaurant Joël Robuchon trained, Fox always sought the highest cooking education possible to ascend and change the industry. With fifteen years total experience, he understands the traditional dining paths and its flaws, leading him to forge new ground in the fine dining market. In Portland, he gained knowledge of local tastes and styles through his career at the northwest cuisine oriented Castagna.
Sous Chef Ali Matteis also brings experience from one of the greatest restaurants in the country from her tours of New York City and Seattle. In New York, she worked in the two star Michelin establishment, Atera, which influenced her growth as an artist significantly. With cross-cultural understanding of the market, and passion for Oregon's farmers and bounty, she brings a unique and well-versed vision to the table.
Nomad. PDX seeks to create a niche in the fine dining industry by focusing on artistry from the natural surroundings in a multimedia fashion while providing an atmosphere of relaxation. Local artists design and handcraft our custom ceramic dinnerware, with sculptors creating an atmospheric ambiance reflective of the dining's showcase. Guest chefs collaborate with Nomad to exemplify new dynamics for creative plasticity. All food, wine and beverage are 100% native to the local ecosystem.
