Champagne ft. Blanc de Blancs
It's time for the holidays and keeping with the theme, it is time for our annual Champagne class. I've reviewed my notes from previous classes and put together a lineup that answers the question, what are the most important things to know about champagne, right now. We'll have an overview of different styles and climates, and then go in depth into Blanc de Blancs Champagnes, made form 100% Chardonnay, which are quickly becoming the most trendy style for both immediate drinking and long term cellaring. In youth, BdB champagnes sacrifice some of the richness of their Pinot Meunier and Pinot Noir dominant cousins, but more than make up with thrilling freshness, aroma and searing brightness. They are the longest lived style, and quickly develop floral and bicuity complexity which keeps them going for decades. If I had to drink wine from just one region for the rest of my life, it would be BDB champagne. Come and share in my obsession. Bring white wine glasses, I'd suggest 6 of them, or use our plastic cups.
