SECOND COURSE
Chicken Liver Mousse

An elegant swath of robustness dances across the tongue. Clean & steely.

THIRD COURSE
Bourride de Sete
white fish stew, peewee potatoes, aïoli

Like a kinder, gentler Tavel. A sturdy backbone but with some elegance sloshing through it.

FOURTH COURSE
Braised Beef Cheek
pommes purée, braised onion

A rosé with some chutzpah. A sturdy wine that could kick down any beef cheek willing to get into the ring.
