Reaping the Rewards: Harvesting Honey at Brooklyn Grange
So our Intro to Beekeeping course had you buzzing with excitement, and the Troubleshooting class took the sting out of swarm season. Now it's time to reap the sweet rewards of your efforts! The last class in our apiculture series is undoubtedly the most delicious: Honey Harvest!
There's no classroom component to this hands-on course. Instead, we'll head right on up to the rooftop apiary, where participants will first learn how to differentiate between unripe nectar and honey that is ready to harvest. Once we've determined that the bees have finished their work and the honey has thickened to a stable viscosity, Dan will show us how to remove the bees from the honey manually, with a bee escape board, and with a fume board.
From there, we'll move into the extraction room where participants will uncap frames of honey for extraction; extract honey with a centrifugal honey extractor; filter and jar the honey, and take part in a honey tasting. This tasting is the ultimate palate training: the different properties and taste profiles of different nectar sources are immediately apparent in honey, which is arguably even more terroir-expressive than wine. You'll leave a regular connoisseur of this sweet, sticky substance, and you'll never take a teaspoon of honey for granted again.
