Hard Cider-making Basics
This four-hour, hands-on class leads participants through the entire cider-making process, from pressing apples to racking the finished cider. Instructor Paul Brookshire is a graduate of Peter Mitchell's cider-making seminar and a passionate home cider-maker, using heirloom and homestead apples from the Methow Valley as well as Seattle fruit. Paul uses the champagne method to produce a crisp, true-flavored cider.
The class will cover equipment needed to produce high quality cider and the step-by-step cider-making process. During the class, participants will press apples to produce juice and will start a batch of cider to take home. The class fee includes basic equipment -- tubing, gallon jug and liter bottle for decanting, bung and airlock, and champagne yeast. Students will also receive an illustrated four-page hand-out on the cider-making process.
