Highlights of the class include a focus on regional ingredients such as capers, Noto almonds, Sicilian sea salt, and Castelvetrano olives; a look at Cannonau, Vermentino di Gallura and wines of Mt. Etna; and learning how to recreate dishes from the current Spiaggia tasting menu.
