Advanced Cheese Chemistry and Cultures
The owner and creator of Dairy Connection, one of the most well-known cheesemaking supply houses in the U.S., Dave Potter, is back again to give us the latest information on artisan-scale cheesemaking. Learn about how to tweak taste and texture using cheese culture and technology in this not-to-be-missed class.
Class takes place Saturday, April 20th, 2013, from 10 to 3 p.m. Location is College of Marin, Novato. Classroom: Pomo 3, Rm 154. Tickets: $100 for CACG Members / $130 for non-members. Lunch and exquisite instruction included.
