Fresh Spring Pasta
Fava greens, nettles, lamb, ricotta, and lemon zest are just some of the ingredients that we will work with in this hands-on pasta making class with Viola Buitoni. During the four hour tutorial we will celebrate spring as we make, from scratch:
Handrolled spaghetti with lamb sugo and pecorino
Handmade orecchiette with spring fragrances and sheep ricotta
Fresh egg fettuccine with meyer lemon, nutmeg and Grana Padano
You will need to bring an apron, kitchen towel, chef's knife, and vegetable peeler. Please wear closed-toe shoes with a rubber sole.
