THE WHOLE HOG
In this class you will gain a basic understanding of what it takes to turn a pig into bacon. After a short introduction to the tools and animal, we will spend three hours working with both sides of a hog. We will begin by breaking down the sides into primal sections, covering the anatomy of the animal while methodically work on each section, ending up with portions, chops, and roasts. This is a hands-on class and students will do all the work, including making sausage, curing bacon, rendering fat and explore the best way to prepare a variety cuts
There is a 20 person limit for this hands on-class.
