Stichelton and Hafod: Modern/Traditonal British Cheese
Our favorite cheesemongers/storytellers from across the pond, Neal's Yard Dairy, are in town to talk about two historic cheeses: cheddar and Stilton. These are the UK's most famous, traditional cheeses, and this class will teach you about the past, present and future of both. Cheesemakers Joe Schneider and Sam Holden of Stichelton and Hafod invite you to taste their cheese and discuss the notion of tradition and how it has shaped their recipes and respective businesses.
Fun fact: Sam Holden is making a Cheddar that eschews more modern practices of Cheddar Cheese making in order to follow influence from an early 20th Century text on cheesemaking.
