Chef Marcelo Ortega of Ortega'z Southwestern Grill will take you through the process of selecting, properly roasting, and pairing a variety of chili peppers and their different uses and applications. Along with recipe tips and a terrific brunch using the kinds of chilis discussed, you will leave with the new found confidence to become your own Chili-Roastmaster.
