As the winter holidays roll around, Italian homes see a constant coming and going of family and friends who drop in for merrymaking, often without notice. The repertory of any self-respecting Italian cook has a number of dishes for this time of the year that can either be prepared in advance and be ready to go in minutes or made quickly and scaled easily.

Gravlax al polline di finocchio (Wild salmon cured with fennel pollen)
Minestra svelta di pane alle bietole (quick bread soup with Swiss chard)
Torta di cipolle caramellate (Caramelized onions tart)
Palline di gorgonzola e mascarpone ai pistacchi (gorgonzola and mascarpone bites with pistachios)
