Saltspring Island Cheesemaking Class with David Asher - Aug 16/17 2017
David Asher's returning to Saltspring Island to teach a class at Bullock Lake Farm after 2 years of touring worldwide with his book, the Art of Natural Cheesemaking.

His comprehensive 2-day cheesemaking course begins with a session on dairy fermentation, covering Clabber, Kefir, Creme Fraiche, and Cultured Butter.  

In the afternoon we'll look at rennet cheeses, preparing the basic curd that can become many different styles of cheese, including Camembert, Blue Cheeses, Washed Rind Cheeses,  Mozzarella and Feta.  

On the second morning we'll make lactic cheeses such as Cream Cheese & Chèvre, and then we'll take the same curd and age it into Crottin, Valencay and Saint Marcellin.

On the second afternoon we will make a wheel of hard Alpine Cheese. And with its leftover whey we'll prepare a batch of fresh, warm Ricotta.

Two days of learning allow students to see many cheeses through the beginning stages of their evolution, and provides insight into how all styles of cheeses evolve from the very same milk with the same culture and the same rennet.

The class focuses on techniques that can easily be reproduced at home or at small scale dairies.  Participants will learn how to take the steps to make their cheeses more naturally, without packaged starters, additives and chemicals, and how to source the best possible milk for their cheesemaking.  Workshops are demonstration style -we all make cheese together round the table.

Daily Schedule:
9:30 coffee, tea and snacks
10-1pm: morning session
1-2pm: farm lunch
2-5:30 pm: afternoon session

Bio:
David Asher is an organic farmer, farmstead cheese maker and cheese educator based on the Gulf Islands of British Columbia, Canada. A guerrilla cheesemaker, David does not make cheese according to standard industrial philosophies - he explores traditionally cultured and more organic methods of cheesemaking.

David offers cheese outreach to communities near and far with the Black Sheep School of Cheesemaking.  Through workshops in partnership with food-sovereignty-minded organizations, he shares his distinct cheesemaking style.  His workshops teach a cheesemaking method that is natural, DIY, and well suited to the home kitchen or artisanal production. He is the author of The Art of Natural Cheesemaking.

Also look for airbnbs around Ganges and the north end of saltspring island. The south end is beautiful but a bit of a drive.

Getting Around:

If taking a car on the ferry to saltspring, be sure to reserve a spot ahead of time.
It's a good idea to speak to an agent to find out your options. they can help you navigate the many routes.

If youre here on foot, the workshop space is a 20-30 minute uphill walk from ganges harbour on a designated trail most of the way. island bus service is limited, but can get you near where you need to go and to/fro the ferry terminals except late at night/early in the morning.

Cycling round the island is possible, but  the geography is hilly,
and the main roads are quite busy especially in summer, with limited visibility and shoulder space and few bike lanes.
