Tradere's Mid-Winter Dinner
Chef David Crutcher, who made a name for himself leading the popular pasta lunches at Il Corvo, will open a monthly dinner pop-up under the moniker Tradere. Tradere, which means to hand down, will be showcasing monthly five-course dinners featuring local, seasonal foods prepared with traditional and artisanal methods.
On January 14, 2017, Tradere will be host a Mid-Winter Dinner at Il Corvo. This will be an intimate dining experience offering a five course menu and will feature wine pairings selected by Sommelier, Karel Cipra.
Here is a look at the five-course menu:
Course One: Pork Rillette with Pickled Vegetables, Mustard and Crostini
Course Two: Salad of Treviso, Arugula, Watercress, Blood Orange and Toasted Hazelnuts
Course Three: Raviolo al Uovo with Mushroom Ricotta and winter Squash Puree
Course Four: Rosticciana Bone in Pork Loin Roast rubbed Fennel, fresh Sage and Rosemary. Served with a Parsnip Puree and sautéed Lacinato Kale
Course Five: Vanilla Panna Cotta with Pears and Honey
