Sourdough Bread Baking, with our head baker Ulises Alvarez
Join our head baker, Ulises Alvarez, in a full class on the professional techniques for building and baking world-class sourdough breads. This hands-on class will focus on the detailed techniques for successfully maintaining healthy starter cultures, building doughs, forming and baking loaves in your own home. We will discuss different grains, their characteristics, sourcing and how they affect flavor, texture and shelf-life of your breads. Students will leave with fresh loaves of sourdough, starter culture "seeds" to build their own culture at home, and knowledge of how to maintain them on your own. Learn all the skills to bake beautiful loaves at home, delicious, fresh and healthy! Ulises has baked at some of Portland's most venerable institutions (Tabor Bread, Fleur de Lis), and now runs the entire bread program for Old Salt and Grain & Gristle. If you have had his delicious breads then you know this is a great opportunity! $65 per person, 3-7pm
