1st KAMAYAN NIGHT of 2016 at HIRO
Kamayan is a special Filipino way of eating. It comes from the Tagalog word kamay meaning hand, so it literally translates to eating with your hands. Eating with your hands is part of the local culture in the Philippines and has been passed down for generations. This is the inspiration behind Kamayan Night at HIRO.
Malou's cooking is a creative combination of traditional and modern Filipino Food. As pictured above, Malou will prepare a spread of scrumptious Filipino food served on a long table lined with banana leaves. NO forks, knives, or spoons needed here! You will get to put your hands to work and eat kamayan style. If you haven't tried this yet, now is the time. This will be one of your most memorable dining experiences.

Red Wine Anchovy Bagna Cauda With Crudites (Re-imagined Pinakbet: Roasted Squash, Green Beans, Eggplant and Okra)
Sisig LENGUA (beef tongue pig's jowl/ cheek cooked three ways: boiled, grilled and sautéed)
Chicken Inasal ( chicken marinated in a mixture of lime, pepper, vinegar and annato then grilled while basted with the marinate.)
Grilled Salmon Belly
Grilled Callos (Beef Tripe, souvide then grilled)
Pork Belly -chon Roasted pork (or lechon Pork Belly Roll) brined with special herbs and slowly roasted. This is Skip to Malou's take on the Philippines' popular lechon (or suckling pig).
