Dirk Fucik, Chicago's friendliest fishmonger, is welcoming Slow Food Chicago into his shop for a cozy dinner celebrating the bounty of our Great Lakes.
Dirk and his wife, Terry, will present nine family-style dishes featuring fresh seafood from Lakes Michigan, Huron, and Erie, and also from fish farms in Wisconsin.
BYOB -- Dirk and Terry will take care of the rest! The menu includes:
***Smoked Whitefish Spread***
Hardwood smoked lake whitefish from Susie Q Fisheries in Two Rivers, Wisconsin. Fresh flaked meat from whole smoked fish combined with a blend of fresh mayonnaise and low fat Greek yogurt and fresh herbs. Served with assorted Red Hen breads.
***Smoked Rainbow Trout Wraps***
Rainbow trout fillets from Rushing Waters Trout Farm in Palmyra, Wisconsin. Cedar plank smoked trout with savory pecorino/anchovy sauce, sautéed pepper and onions in a flour tortilla wrap.
***Panko Rainbow Smelt***
From Lake Erie, Leamington, Ontario. The original "fish French fry". Panko breaded, crispy fried, served with homemade garlic aioli.
From Lake Erie, Leamington, Ontario. Pan sautéed, crispy skin on, served on Greek-style bread with spicy cabbage slaw and spicy mayonnaise.
***Tempura Yellow Perch***
From Lake Erie, Leamington, Ontario. Dipped in Terry's tempura batter then crispy fried served with homemade remoulade and tartar sauce
***Plank Smoked Lake Trout***
From Lake Huron, Georgian Bay, Ontario. Fillets marinated in ginger garlic dressing and slow smoked on a cedar plank. Served with Washington State sea beans.
Whitefish from Susie Q Fisheries in Two Rivers, Wisconsin, Trout from Lake Huron, Georgian Bay, Ontario. This is a typical Cuban dish that Dirk and Terry love. A combination of mild lake trout and lake whitefish, seasoned and blended with a creamy white sauce then rolled in panko crumbs and pan sautéed. Served with saffron aioli.
***"Cook County" Fish boil***
Lake trout (Lake Huron) and lake whitefish (Two Rivers, Wisconsin). Dirk's take on the traditional fish boil of Wisconsin. Butter poached fillets served over mashed finger potatoes and caramelized sweet onion.
***Terry's Spinach Salad***
Green City Market baby spinach, sliced white mushrooms, parmesan cheese, extra virgin olive oil, and awesome homemade garlic croutons.
